We understand our role in the preservation of endangered sturgeon species and source roe exclusively from CITES-approved suppliers.
We source Kaluga-Huso roe from a land-based aquafarm that runs recirculating water systems, uses rooftop solar, and partners with research groups on sturgeon aquaculture. Every batch is fully traceable and imported under CITES approvals.

Precise grading and maturation
Each batch of sturgeon roe is graded based on size and appearance before being seasoned and preserved with fine salt.
The roe then undergoes a monitored maturation process in our cold storage facility in Rotorua, New Zealand, for a minimum of 30 days, with precise monitoring and temperature control. The result is rounded flavour and settled texture you can rely on.
Only well-formed eggs make it to the tin. We seal in food-grade caviar tins made in France, then hand-label and box with New Zealand-made packaging. All finishing is completed in house for clear accountability, tin to tin.

Nationwide, chilled delivery
We ship overnight on ice in recyclable thermal packaging with reusable ice packs. Orders are prepared to travel safely for up to 48 hours so your caviar arrives in peak condition.
